In a large sauté pan heat 1/2 cup of oil, add oysters to the oil making sure not to let them touch. Coat each oyster with the potato mixture, and brush with clarified butter, refrigerate 30-60 minutes. In a colander, toss the potato, apple and onion and squeeze dry. In a mixing bowl, mix the egg with flour, salt and pepper. POTATO AND FENNEL CRUSTED OYSTERS WITH NAPLES VALLEY MUSTARD DRESSING Brush tops with milk bake at 400° 20 to 25 minutes, until browned. Press down center of biscuits with the back of a soup spoon, and fill with apple mixture. Cut rounds and place on a greased and floured baking sheet. Turn dough out onto a floured surface and knead gently a few times, until smooth. Mix together lightly with a fork, just until moistened. Sift together flour, baking powder, and salt, cut in butter. (Actually, it's probably a mini-thermos.) I can close mine up, throw it in my purse, and there will be not one spilled drop when I get to work. Get one of their closed-top travel cups if you go. So if you are anywhere near Drake and Mason and you need some cheer and a good latte, make sure you stop in to Cuppy's. It's small enough that if you had an antsy toddler, you could hang out on the couch and let your little one walk around a bit and not worry. It always seems like there is a place to sit though. They encourage small group gatherings (shout out to the retirees that meet on Thursday!) and they don't mind the vet students that camp out at a table for awhile. 6) They provide cozy seating (but only a few couches/loungy chairs and maybe 6 tables) and a nice picnic area out back. 5) There are several types of fancy sandwiches and soups for lunch. They buy these from a local GF baker, but they always taste fresh and very good. Try the peach tartlets in the fall! 4) They have an assortment of gluten-free breakfast breads. Katie will tell people when she's making seasonal tartlets during the week and people will come in just for those. Their home-made breakfast items and tartlets are really good. This includes serving great espresso drinks and using high-quality ingredients. 2) They work quickly, recognizing that many people are busy and are stopping off before work. On the other hand, they are very perceptive and will take your cue if you are not in the mood to talk. You honestly feel like you are visiting friends when you go in. Why? 1) They are always friendly remembering details about their customers' lives and always making people feel welcome. On a recent trip to Cuppy's, another customer went up to the owners and said, "I'm from a small town and I have to tell you guys, you really know how to run a small business right." I wholeheartedly agreed and then realized that Kirk and Katie are my favorite small-business owners in Fort Collins.
